• 1/2 mango
  • 1/2 avocado
  • parsley, fresh
  • pumpkin seeds
  • lemon, juice
  • 2-3 tbsp balsamico vinegar
  • salt
  • pepper

for garnish:

  • balsamico creme
  • pumpkin seeds

  1. Cut the mango and avocado lengthwise and widthwise. This will create small rectangles that can then be easily removed.
  2. Place in a bowl. Coarsely chop the parsley.
  3. Add parsley and pumpkin seeds to the mango, season with a little lemon juice, and season with salt and pepper.
  4. Add 2-3 tablespoons of balsamic vinegar and gently toss the salad.
  5. Arrange salad on a plate. Garnish with some pumpkin seeds and some balsamic cream and serve.
