Ingredients:
- 1/2 mango
- 1/2 avocado
- parsley, fresh
- pumpkin seeds
- lemon, juice
- 2-3 tbsp balsamico vinegar
- salt
- pepper
for garnish:
- balsamico creme
- pumpkin seeds
- Cut the mango and avocado lengthwise and widthwise. This will create small rectangles that can then be easily removed.
- Place in a bowl. Coarsely chop the parsley.
- Add parsley and pumpkin seeds to the mango, season with a little lemon juice, and season with salt and pepper.
- Add 2-3 tablespoons of balsamic vinegar and gently toss the salad.
- Arrange salad on a plate. Garnish with some pumpkin seeds and some balsamic cream and serve.
