Ingredients (4 servings) as a side dish:

  • 1 lemon
  • 4 1/2 tbsp olive oil
  • 1 handful of fresh mint leaves, roughly chopped
  • 1 shallot, halved and thinly sliced
  • 1/2 green chili pepper, finely chopped
  • 1 big cucumber, halved, cored and cut diagonale into 5 mm thick slices
  • 60 g lamb’s lettuce
  • 10 g dill, roughly chopped (alt. dill tips)
  • 10 g fresh basil
  • 1 tsp salt
  1. Cut 7 thin slices from the lemon and core.
  2. Remove half of the peel and throw it away, then finely chop the slices together with the remaining peel.
  3. Squeeze out 2 1/2 tbsp of juice from the rest of the lemon.
  4. Mix the lemon together with the oil, mint, dill, shallots, chilies, cucumber and salt.
  5. Add the lettuce and basil. Mix the salad and serve immediately.
