Ingredients (1 serving):

  • 1 banana, halved lengthwise
  • 1/2 apple, cut into medium size slices
  • 2 tsp honey or maple syrup
  • 1/2 tsp cinnamon, ground
  • 1/4 tsp speculatius spice
  • 1/4 tsp gingerbread spice

for the sauce:

  • 1 tbsp curd (alt. yoghurt, soy yoghurt)
  • 2 tbsp coconut milk (alt. almond/ oat/ soy drink)
  • 1/2 vanilla pod, pulp of it
  • 1 tsp maple syrup
  • some lemon zest

for garnish:

  • 2 tbsp flaked almonds
  • 1 tsp butter/margarine
  • 1 tsp cranberries, dried
  • 1 tsp honey or maple syrup

  1. For the sauce, place all ingredients in a small bowl and mix well. Refrigerate until ready to serve.
  2. In a skillet, sauté apple pieces over medium-high heat. After 2-3 minutes, add the spices, stir everything well and sauté for another minute until the spices are fragrant. Add 1 tsp honey or maple syrup and stir well. Slide apple pieces to one side of pan.
  3. Meanwhile, in a small skillet, heat almonds along with butter or margarine over high heat. Sauté, stirring constantly, for 3-5 minutes until the almonds have taken on a little color. However, they should not get too dark.
  4. Add the banana halves to the pan with the apple pieces and fry for 2-3 minutes on each side until lightly browned. Brush with 1 tsp honey on both sides and continue to fry briefly.
  5. Place apple pieces in a bowl. Carefully place banana halves on top so they don’t break apart. Pour the sauce over them. Garnish with dried cranberries and the sautéed almonds. Finally, drizzle with honey and serve immediately.
