Ingredients (4 servings) as a side dish:

  • 400g tomatoes, various sizes and colors
  • 1 medium red onion, peeled and cut into fine rings
  • 1 tbsp white wine vinegar
  • 1 tsp oregano, rubbed
  • 1/2 tsp thyme, dried
  • 1 pinch chili flakes
  • 1 spring onion, halved and cut into fine strips
  • 10g basil, fresh
  • 5g mint leaves, fresh
  • 10g parsley, fresh, roughly chopped
  • 2 tbsp olive oil
  • 1 tsp maple syrup
  • salt
  • pepper, freshly ground

  1. In a bowl, mix the onion rings with white wine vinegar and 1/4 tsp. salt. Using your hands, gently knot the vinegar into the onion rings. Let steep for 20 minutes.
  2. Halve large tomatoes and cut into different sized pieces. Cut cocktail tomatoes in half and leave very small tomatoes whole.
  3. Mix in a bowl with olive oil, maple syrup, oregano, thyme, chili flakes, a pinch of salt and a good pinch of freshly ground pepper.
  4. Add the finished onion rings to the tomatoes in the bowl and mix. Finally, add the spring onion, basil, mint leaves and parsley, toss briefly and arrange on a large platter. Sprinkle with some chili flakes and fresh pepper and serve.
