Ingredients (2 servings) as a side dish:

  • 200 g Pimientos
  • olive oil
  • 1 tsp sea salt flakes
  • pomegranate seeds
  • 1/2 spring onion, cut into thin slices
  • 50 g gorgonzola/feta cheese
  • 1 tbsp maple syrup (alt. honey)
  • 1 tsp lemon zest
  • pepper, freshly ground

  1. Wash pimientos. Heat olive oil in a large skillet over medium-high heat and sauté pimientos on all sides. Keep swirling the pan so that the pimientos are browned on all sides.
  2. Add 1 tsp sea salt flakes and continue to sauté pimientos until browned on all sides.
  3. Arrange on a large platter, garnish with gorgonzola/feta cheese, pomegranate seeds and scallions.
  4. Lastly, drizzle with 1 tbsp maple syrup and top with freshly ground pepper and lemon zest. Serve warm.
