Ingredients (2 servings) as a side dish:
- 200 g Pimientos
- olive oil
- 1 tsp sea salt flakes
- pomegranate seeds
- 1/2 spring onion, cut into thin slices
- 50 g gorgonzola/feta cheese
- 1 tbsp maple syrup (alt. honey)
- 1 tsp lemon zest
- pepper, freshly ground
- Wash pimientos. Heat olive oil in a large skillet over medium-high heat and sauté pimientos on all sides. Keep swirling the pan so that the pimientos are browned on all sides.
- Add 1 tsp sea salt flakes and continue to sauté pimientos until browned on all sides.
- Arrange on a large platter, garnish with gorgonzola/feta cheese, pomegranate seeds and scallions.
- Lastly, drizzle with 1 tbsp maple syrup and top with freshly ground pepper and lemon zest. Serve warm.
